Sweet Potato Casserole With Marshmallows - Delish image

Sweet potato casserole deserves an actual spotlight shining bright on it during Thanksgiving dinner, complete with toasty marshmallows and fragrant pecans.

Cooking spray 
4 c. large sweet potatoes, peeled and cubed
1/2 c. packed brown sugar
8 tbsp. (1 stick) butter, melted
1 tsp. pure vanilla extract
1/2 c. milk
2 large eggs
1/2 tsp. kosher salt
1 c. packed dark brown sugar
1/2 c. all-purpose flour
4 tbsp. butter, melted
1 c. chopped pecans
2 1/2 c. mini marshmallows

Steps:

  • Preheat oven to 350° and grease a 9-x-13" baking dish with cooking spray. Place sweet potatoes in a large pot and cover with water. Bring to boil then reduce heat and simmer until the sweet potatoes are tender, about 15 minutes. Drain and let cool slightly then transfer to a large bowl.
  • In a large bowl, stir together sweet potatoes, sugar, butter, vanilla, milk, eggs, and salt until smooth. Pour into prepared dish.
  • In a medium bowl, stir together sugar, flour, and butter until it clumps. Stir in pecans, then spread evenly over potatoes. Top with marshmallows.
  • Bake until cooked through and golden, about 30 minutes.

1-1/2 cups sugar
2 tablespoons all-purpose flour
1 can (5 ounces) evaporated milk
1 egg, lightly beaten
1 teaspoon vanilla extract
2 cups mashed cooked sweet potatoes (about 3 potatoes)
1 unbaked pastry shell (9 inches)
GLAZE:
1/2 cup sugar
2-1/4 teaspoons all-purpose flour
2 tablespoons butter, melted
2 tablespoons evaporated milk
1/4 cup pecan halves

Steps:

  • In a bowl, combine sugar, flour, milk, egg and vanilla. Stir in the sweet potatoes. Pour into pastry shell. For glaze, combine the sugar, flour, butter and milk; drizzle over sweet potato mixture. Garnish with pecans. Cover edges or pastry loosely with foil. , Bake at 375° for 45 minutes. Remove foil; bake 15 minutes longer or until crust is golden brown and a knife inserted in the center comes out clean.
